It doesn't matter really, the OS and CPU don't do any of the mining, only the GPUs/ASICs do.
They also make tiny 20-40gb ssds that are cheaper if you're only using the OS for the mining software.

ETHOS is 39 bucks and has lots of support for beginners. Windows is fine too. really it doesn't matter. If you have a number of rigs going you just setup network boot, if one or two, small SSD's are cheap.

Note, if using windows with some mining software and multiple cards, you will be required to set the swap file over 16GB in size, which is too small for a 30gb SSD. If you use windows, procur 60 GB SSD minimum.
