The Pentium will not game well. Ignore it. If you're going with Ryzen, try to stretch to a Ryzen 5 (you'll end up upgrading to it anyway...). 8GB RAM is the perfect starting point. Go with the B350 motherboard. Any GPU with 4GB RAM is fine: I like the GeForce GTX 1050Ti and use the money you save from the 1060 to upgrade from an HDD to an SSD. You will sacrifice size for speed, a worth while trade-off. Get a 256GB if you can afford it, a 128GB otherwise. You can always add a bigger SSD later. If you want to stay with the spinny HDD for now, any WD or Seagate 1TB will work fine (make sure it's a 7200rpm 64gb cache version). Buy the cheapest case you can find: it's a great way to save money on a build. Also shop the sales...
