Hey guys could you please post the best builds for gaming, video editing, programming and running virtual machines for under £1,500? Thanks

build 2: cooler too weak, motherboard is weak on VRM, PSU is overkill

For your budget, I recommend Ryzen for 3 out of 4 tasks: video editing, programming and running virtual machines. For gaming, 1700 OC can get close to I5-8400.
