So I'm ordering parts for a custom water cooled loop and I want a pump/res combo form EKWB but they only go up 140 reservoirs and i want a 250, am I able to purchase the pump/res combo and then purchase a 250 res and replace the reservoir on there already with it?

yes you can do it.
or you can get just the motor (from practically any company shipping D5/DDC whatever you like) and get the pump top, cover, reservoir and mounting from Singularity Computers. Way more quality and flexibility.
