My first assembly! I'm hoping for a sweet kit that I can continue to play Arma 2, start Arma 3 and add some new titles like PUBG, Rainbow Six Siege.. Not planning on using this rig for much else.
Hoping to play on an ULTRAWIDE 1440 at min 100hz. Budget: Under $2500 for PC + 1 monitor. See bottom for some more notes /questions. Thanks!

I'm a total noob at this so I have some questions/notes:

My current setup uses 272GB of space. Can I just run everything off a single SSD like the Samsung 512 Drive?

Would like to have USB-C header on motherboard.

Any recommendations for a good water CPU cooler in lieu of air-cooled?

I'm not tied to Intel but I'm not familiar with AMD.

Lastly: I heard Arma is single-core heavy::::

My current i7-4771 Haswell has single core benchmark of: 2251, the new i5-8600k at 2533 and new i7-8700k at 2730

Does it make more sense to "upgrade" to the i7-8700k?

Solution
I'll be porting windows 10 from my boot camp iMac so I won't need to buy another windows 10. That puts all this under my budget. That monitor is pretty sweet but released in Q1 2016. Surprised there is nothing better yet at the same price point.

I'll be cutting out the M.2 drives and only running an SSD now. Can add more storage as I need. I do kind of want a water cooler on this build. I think I can fit that in the budget. I'll be selling my iMac for (hopefully) around $1000 so that will help. I don't want to skimp too much on the cpu and find out there is not too much an improvement over the iMac.
Can you list your current rig? You may end up spending less if upgrading your current rig.

For gaming, regular ssd is good enough, don't waste on nvme ssd.

For gaming, Intel rules. Do you plan to streaming? If not, stick to Intel, if you do, you may consider coffee lake I7.
