I have a 1070 and it works great, but I just recently came across some more money and what wondering if I should get another one, but before that I need to know if I could run SLI

Buy a 1080 or 1080ti if you want to upgrade. Almost always a single more powerful card is going to give you better performance since so few games use SLI or are optimized very well if they do. In fact some games run better with it disabled, SLI is sorta a gimmick at this point that developers and even Nvidia dont seem to care much about.
