NAS just as storage for plex

So I have been running plex for a while on my main gaming pc and while this has been great I have wanted to move the storage of the computer so that my speed in games isnt affected everytime someone wants to watch somthing.

so my question is can i set up a basic cheap NAS with 2 2 tb hd as a storage device and send plex to look there for my media?

That would work, but I'd suggest not having users connect to the Plex server on your PC, as that would still affect performance. You might instead consider a Plex enabled NAS, or just enable DLNA on the NAS to allow PCs and media devices to find the videos.
