How should I manage my storage space(videos, games, movies etc...)?

I have 3 HDD's:

Two 2TB Seagate Barracudas and a 500GB Seagate Barracuda. I've made the two 2TB drives almost identical in content, one serving as a backup for the other. The 500GB I still don't know exactly what to do with it. The older 2TB drive has got 2 small 90GB partitions on which I have Windows 7 and 10 installed so I can dual boot.

Is this the right way to go about it when it comes to managing my files with these HDD's? Is there a better way?

Probably better way of organizing your storage would be:
moving OS-es to 500GB drive (or getting SSD for your that) and
setting 2TB drives in mirror raid (that way they'd contain the same data automatically).

Can I setup my 2TB drives in mirror raid even if they're different models? I mean, they're both Seagate Barracudas, but one of them is more recent than the other and of a different model. Can I still set them up in raid? And how would I do that?

I think that's exactly what I've done with the 2 2TB disks through Windows 10's Disk Management I deleted them both and sort of mirrorred them and I ended up with a 4TB(approx.) Dynamic Disk which wasn't as fast as I was expecting.
Then I had a lot of trouble to separate the 2 drives and get them working normally again separately. They not only turned into a big Dynamic Disk(which makes it impossible to install Windows on it) but also they went into GPT mode instead of MBR.
