So i was wondering with this

Intel Core i5-7500 3.4 GHz Quad-Core LGA 1151 Processor
GeForce GTX 1060 GAMING 6G Graphics Card
1 x 8 gb ram [2133 mhz] {i already have the 8gb and MB just not the CPU and GPU}
H110M pro-vd

If there was a huge difference between 1 x 8 and 2 x 4, as in if i play newer games would i be able to run them at High/ultra 1080p (60 fps) with no stutters etc.

Solution
The YT video uses a GTX 1070. 60 FPS with a GTX 1060 at what resolution? Adding another 8 GB module may help, but you need to test it yourself. You probably already know that you can't always match the performance that you see on YT.

Thank you for answering but are you sure of this? because i've seen videos with 1 x 8 and 2 x 4 and they all had like 10-30 fps more just by using 2 x 4

What hardware did they use? There is a difference when using an APU and a discrete GPU; an APU benefits the most from dual channel.

Did you find a link where you see a 10-30 FPS increase with hardware similar to yours? An increase from 300 to 330 FPS is not worth the expense, but if you decide to upgrade to dual channel, then a 16 GB kit may be a better option.

I've heard its in GTA V and BF1

I'd like to know if i can still get 60 fps 1080p on ultra with 1 x 8

Thanks again!

I am not sure how 1 8gb stick would work, but I think having 8gb should be fine, since I have 2x4 and can run GTAV at I guess normal settings 60-70FPS at 1080p. I can only go normal since my GPU is like minimum.

Specs
FX 9370
7870 2GB
8GB 2x4GB DDR3 RAM

I think for later games it might be better to maybe buy another 8gb to have 16, since I noticed myself a lot of newer games take more ram then before... but for GTAV and BF4 you should be fine?
