Need more feedback on new build

Old computer died. Mouse, keyboard, and the storage drive survived. Have an old Benq q23w3 pf231w that still works but really needs replacing (burn in issues). Mainly need this for gaming (Fallout 4 1080p 60hz maxed, No Man's Sky, and some occasional Minecraft for the kiddo).

What I'm unsure of: going AMD over Intel (NMS had some AMD issues.iirc), Mobo and case (not red, the dead rig is red and Im quite done with red, if its gotta have lights bling and and a window then please blue or something g I can edit to taste)

Also need some.monitor suggests in light of the above. I do need to get two but I don't mind having a better primary over the secondary as it'll only be for web browsing and work related stuff (boring ms office web browsing stuff)

Trying to keep budget at 1750 for PC, 750 for the screens. Canada. Under is better

Good build in general, but I will get 1600 and throw away the cooler, stock is good enough for OC to ~3.8
Only 525 gb ssd? Add an HDD
The case needs 1 more fan
