at 1080p - 60hz monitor resolution you will not see any major draw backs by buying a strong GPU, there will be a small bottleneck existent but nothing to worry about. Biggest performance hits will be on games that use 4cores+ (which is what you listed...)
question, which GPU do you have right now? If you get decent performance from it, maybe wait a little bit into the year for nVidia's VOLTA gpu line. it'll be priced around the same as current GPUs, but you'll get something useable for more years to come (instead of gtx 1060 -> gtx 2060 - with more vram as standard), and possibly transfer to a newer system if you build in a year or two without feeling like you need to purchase another component.
