Subpar FPS. Is there something wrong with my build?

Hi guys. So I bought a new Z370 board and an i5-8400. I've been looking at a lot of vids on Youtube and reviews about them when paired with a GTX 1060/1070/1070 Ti/1080/1080 Ti and when paired with the 1080 Ti (which I have), it breezes through 1440p and 4k. Heck, even the 1070 when paired with the processor could do 1440p at 60fps. I would think my 1080 Ti would fair better than a 1070 but why am I getting subpar performance from them.
A 1070 Ti could do and avg of 74fps from Shadow of War my 1080 Ti could do low 80s Battlefield 1 with 102 max and my 1080 Ti is somewhere around there as well GTA V with an avg of 119 my 1080 Ti could only max at 90s. Heck even NBA 2k18 on the 2k camera angle only gives me 55-60fps. You guys get the trend
AND MY GPU ALMOST ALWAYS REACHES 80°C when I play these games.
My main question is... Is there something off with my build?

i5-8400 with stock cooler
Corsair Vengeance LED 16GB RAM
MSI GTX 1080 Ti Gaming X
Seasonic S12II-Bronze 620W

@ARICH5 but when I started up for the first time it stated that it was setting up new hardware or something like that. And when I go to device manager it recognizes my new CPU and MOBO. Correct me if I'm wrong.

How do I do that without losing my files?
