I am aware that Windows 7 install doesn't natively support USB 3.0, but unfortunately my PC has only USB 3.0 and 3.1. I followed this guide to put the necessary drivers into boot and install wim files which worked, and I used it multiple times successfully with my PC. That is, until recently I attempted a reinstall, and it worked as it had before, but after it finished the initial install and rebooted (from the hard drive instead of the usb) and it got on the screen asking for language, username, and pc name, the keyboard and mouse no longer worked. The lights weren't turned on on my keyboard, so I know it was something with the usb 3 drivers. I tried redoing my usb installation by following the guide again, but that didn't work. This breaks my brain because there is no way that the usb ports would work in the beginning of the installation from the usb, but not work near the end on the drive, right?

Some possibly relevant info:
I'm trying to install Windows 7 Pro 64-bit on an Asus Maximus IX Hero
I dont have any PS2 keyboards or mice to try with
There are only usb 3 ports on my case and on the motherboard i/o
I've unsuccessfully tried installing on another computer and then moving the drive
I know that Microsoft doesn't like people trying to use windows 7 with the newer cpu generations
It's worked in the past, so I know it's not impossible
No, I don't want to use Windows 10 (I've had to use it for about a week now and hate it)

I greatly appreciate any insight!

Tried a bunch of drivers, but the only ones that had the keyboard and mouse working in the first part of the install (but stopped in the second part) were ASMedia USB3.1/USB3.0 Driver V1.16.49.1. Forgot to mention before, I'm trying to install it to my M.2 drive (I did it successfully in the past) by putting the Samsung M.2 drivers on the usb and loading them in to the installation

I've used the following to create a Windows 7 installation USB flash drive for an ASUS PRIME Z270M-PLUS motherboard.

In order to build the patched version of Windows 7, you'll need a few things:

1) A genuine copy of Windows 7 CD/DVD or ISO file
2) A USB drive with over 4GB of storage
3) A separate computer
4) The Windows USB Installation Tool available for free from GIGABYTE ( http://download.gigabyte.us/FileList/Utility/mb_utility_windowsimagetool_z370.zip )

Once you download and extract the Windows USB Installation Tool from GIGABYTE the process is fairly easy. Here's the process you need to follow step-by-step:

1) Run the WindowsImageTool.exe file. There's no need to install it since it is a portable application.
2) In the source option select your disc drive where the Windows 7 CD/DVD resides or where the ISO is mounted
3) In the destination path pick your USB drive where you want the resulting patched Windows 7 installer written to.
4) Make sure the 'Add USB drivers ...' option is selected
5) Make sure the 'Add NVMe drivers ...' option is seletced if you need to install Windows 7 onto an NVMe drive (the 'Add Packages ...' option is automatically selected when the 'Add NVMe drivers ...' option is seletced)
6) Click on the Start button and wait for the process to finish.

Note: if you just need to add the USB drivers to an existing ISO you can do that from the source option.

So the first time I tried this yesterday, it worked beautifully, but I derped and turned off my PC mid install, to which the boot device didn't work anymore. I go to redo the installation, and it doesn't work anymore. I've been trying different combinations for the past 2 days with no luck: 4 different computers, windows 7, 8, and 10, trying putting in the drivers in other ways (loading the wim files or loading them from a hard drive during install), using ps2 keyboard emulator motherboard option (didnt know about it before) and Asus' version called ez installer. Most of the time, the program fails to unmount the wim file and either blue screens the computer or spits out error 0x80070005. The furthest I've gotten other than the first try that I derped is to the hdd select screen, and either not having the m.2 nvme drive there, or trying to load the drives and still nothing comes up. Why would it work perfectly the first time and then never work again? I've completely run out of ideas and I'm burnt out from working on nothing but this for almost 3 days now. Any insight would, again, be highly appreciated.
