Planning on building gaming pc. Need suggestions please

So after 12 years I'm overhauling my pc for major upgrades. I know I will have to replace the processor, motherboard, memory, processor cooler and possibly the case (for better cooling)

I have a CoolerMaster 750W power supply that is only a couple years old, 2 250gb Seagate barracuda SATA hard drives and a Gigabyte GTX 1050ti video card that I plan to use from my existing pc. I also have a Thermaltake Soprano case that I might keep

My budget is $800ish

So what I'm thinking of getting is:

-Intel - Core i7-7700K 4.2GHz Quad-Core Processor ($325)
-Corsair - H100i v2 70.7 CFM Liquid CPU Cooler (I wonder if 2 fans are overkill) ($85)
-MSI - Z270 GAMING M3 ATX LGA1151 Motherboard ($120)
-Corsair - Vengeance LPX 8GB (1 x 8GB) DDR4-2400 Memory ($97) (I plan to double the memory later or replace with faster memory)
-Microsoft - Windows 10 Home OEM 64-bit
and possibly this case:
-Thermaltake - Versa N24 ATX Mid Tower Case ($52) (I like the looks of this case but have seen some negative reviews on it so I'm hesitant)

Now I'm also considering paying a bit more for gen 8 processor and motherboard but not sure about that. I would like the option for future upgrades and realize that getting 7th gen means I would have to get another motherboard and processor down the road when I needed to upgrade again

So I need suggestions on well EVERYTHING! I haven't built a system in over a decade and need advice. Seriously though is there a better motherboard for my budget and goals that you recommend? Same for the cooler. Would it be a great benefit to go ahead get a newer say 1tb hard drive instead of using my existing ones? I don't want to spend $ if I don't need to but at the same time if only a few bucks more would make a noticeable difference then I'd definitely consider it.

So I'm open to suggestions. About the ONLY thing I'm set on is using my existing video card and an Intel i7 processor. I bought the video card recently after my last one died and purposely got one that could go into my NEXT system.
