The key to your question is that you game.
The I7-8700K cores are faster, and that is what games need most.
Few games will effectively use many threads.
If your requirements were solely for multithreaded apps, the 16 ryzen threads might be better.
But, 12 faster threads from the 8700K will come close in editing.
Even if the ryzen 7 were to outperform the 8700K in editing, (I think they will be similar) it is easier to tolerate longer edting runs than it is to tolerate game stutters caused by insufficient core speeds.
Top ryzen overclocks are in the 3.9 range, while top 8700K overclocks are in the 5.0 range.
Intel will have a slightly better performance per clock.
