Please someone clarify something about Raid 0 for me?

I've put a 2TB HDD and 500GB HDD together in Raid 0(Striped) through disk manager in Windows 10 and the result was a 1TB dynamic disk which apparently is working fine.

But I've been told the result of this should be a 500GB drive, not a 1TB one. How come?
And how much faster is such a Raid 0 drive supposed to be than a normal 7200rpm HDD?

It would result in a 1TB RAID array.
For performance that is easily beaten by any standard SSD.
And adding the much greater data loss potential.

Whoever told you "500GB" mistook this for a RAID 1.

Raid 0 disk drives is not that big of a performance gain and yes it is supposed to make the 2tb driv work as a 500gb drive so you can have a single 500gb drive. Why are you doing this tho? You are loosing a lot of storage space and using non matching drives in raid 0 is 1 thing but different sizes is just asking for wierd issues.
