Dual channel memory in Quad dimms

DIMMs don't care how many channels the platform has. What ultimately matters is whether the DIMMs will play along with each other fine when they're each on their own channel on a quad-channel motherboard/CPU or when they're paired together on a dual-channel one.

Unless the specific DRAM kit you're using is explicitly listed by the motherboard or DRAM manufacturer for your specific motherboard, you won't know for certain until you try it.

It is the motherboard that determines single/dual/triple/quad channel ram operation.

I suspect your real question is if I have 4 sticks of ram and insert them into the 4 slots of a dual channel motherboard, what do I get.

If the sticks play well together(they were bought in a single kit) then you will have dual channel operation.

If they do not play well together, you probably will have 2 sticks that are unusable.
