How can I 'de' RAID5 my three HDD's?

Hi,
I currently have a RAID5 array utilising three x 4TB HDD's on an ASUS Prime Z270-AR.

I now want to return these drives to three non-RAID drives. My data has been moved off the RAID volume onto a back up HDD, and my OS sits on an SSD so I'm not worried about the data on the RAID drive(s).

What I need to know is how do I break (unRAID) these drives so they can be used as normal drives again.

And I know you will want to know how I implemented the RAID in the first instance, trouble is I'm not completely sure! It was such a hassle. I tried the on board raid but think in the end I did something via the Windows command (run) prompt.

You are correct. We do need to know how you implemented your RAID to give any sort of meaningful explanation. There are three basic types of RAID.
1. RAID created by your motherboard through the UEFI (formerly called BIOS)
2. Hardware RAID controller
3. Software RAID created from within the operating system

Unless you know which type of RAID you have, I can't help.
