Need help making a budget gaming build that can be upgraded ($800~)

Hello, I was going to build in November / December of last year but things came up and I didn't have the funds. I have some funds now but with the GPU shortage I can't make the build I wanted so I would like something I can upgrade later in the year.

What I would really like this computer to be able to do is play games like Elder Scrolls Online / Final Fantasy XIV / Black Desert Online in medium or higher graphics and then as far as the later upgrades I'd like to be able to play Monster Hunter Worlds when it comes out for PC later this year. Also, being able to play Ark: Survival Evolved in higher graphics later would be nice.

Budget: $800-1000 USD (Closer to 800 the better atm)
When to be build: ASAP
Not needed: Hard Drive (I have a 2 TB HD to use), peripherals (keyboard, mouse, etc)
Would like: An SSD to put games on (If it fits the budget / if I even need it). I would also love to have dual monitor support.

With this build, once prices calm down, you can add in a 1060 or 1070. But you cannot game for now.

However, Microcenter is having this deal where you can buy the GPU at MSRP or close to MSRP, if you buy the CPU, RAM, Mobo and PSU from them and convince them it is for gaming and not mining.

For OS, you can download the ISO off the Microsoft page and install it, but not activate it if you do not mind the watermark on the OS.
