i7 8700k and Cryorig H7 cooler??

I won't be overclocking so would this cooler be sufficient to keep the temps under control? My main use will be for video editing and processing - no gaming.

Would I be better served with the Noctua NH D15?

If you're not going to overclock the NH D15 isn't necessary. The H7 is even a little overkill for a non OC'd cpu to be honest, but still, may as well get a solid cooler. Both are good ones.

NH D15 you run into potential size issues. It conflicts with some ram. Check the Noctua site and see if your motherboard is listed. The H7 on the other hand is much smaller and less prone to compatibility issues.
