Questionable GTX 1080 Ti performance in GTA V?

Hey all, I recently built a new computer for Christmas and thus far it's been performing like a dream.

With several slight changes:

I chose an i7 8700k instead of an i7 8700
I bought a ROG-STRIX-GTX1080TI-O11G-GAMING card instead of the regular 11g one.

When I play most games (I do it on 2560x1080) they never dip below 60 fps on maxed out settings, and with VR it's almost constantly at 90.

GTA V is puzzling me though, because it will normally be at 70-80 fps, but whenever I encounter any amount of trees that aren't in the city or grass, I'll drop to 40--I even dropped to 27 once, was awful.

I have no idea what's causing this other than unoptimization, I've turned grass quality all the way down to normal while keeping everything else relatively high and I always set the CPU priority for GTA to high. If anyone's got some clues about what's going on, that would be great. Thanks!

It could possibly be related to the anistropic being set to 16 as well as the type of hard drive the game is installed on. With these open world games, as you move around, the "world" loads at certain points. If you are using a traditional hard drive and the rpm/cache isn't the greatest, you will notice occasional "lag"(which can register as an fps drop).

I would suggest using a drive that's 7200rpm and preferably w/ 256mb cache to ensure the smoothest loading times. If you are using an SSD though then this is most likely not the issue(unless the SSD has a low read/write rate, which can happen with 2.5" SSD's).
