Are frame rate drops an issue if its above 60fps? (uncapped)

I recently got a new gaming computer. Everything seems to be running fine. I usually get around 122 fps max, but I do notice it always jumping around (minimum being 80-90ish fps) This is all while playing the games on max.
I'm not complaining or anything, just wondering if this is normal?

So far the games I noticed this with is:
-Black Desert Online
-Total War Warhammer 2
-Escape From Tarkov

My specs are:
-i7-8700k @ 3.7GHz (12 CPUs)
-16GB DDR4 3200MHz (2 x 8GB)
-GTX 1080 Ti
-Running on a 250gb Samsung 960 Evo PCIe NVMe M.2 (Idk if this effects fps or not.)
(If im missing something let me know :) )

Solution
Ok, at 1440p 144hz is a somewhat demanding resolution, but the 1080ti should be able to barrel through. I believe that it is normal for FPS to jump around depending on the area you are in while gaming. One thing you could do is check the GPU temps while running your games with something like CPUID Hardware Monitor or MSI Afterburner to see if you are getting too hot. I would recommend using Afterburner to create a more aggressive fan profile, the cooler your GPU is the better. I'm willing to bet that you are probably getting a smudge warm and your GPU is throttling a bit, so a better fan curve will probably get you straightened out.
