Will a Corsair RM 500x 500w psu run a GTX1080?

Corsair doesn't make a 500w RMx. The smallest RMx is 550w. And it will work 's a good choice for the system.

A good 500W should be ok for 1080+8700 as long as you don't OC the 1080 like crazy.
RM line is good but there is no 500W.
If you see 500W, this PSU could be fake.
