Your cost of Z270 mobo and i7 6700K is enough to get Z370 mobo and i7 8700K. i7 8700K is 6 cores and 12 threads. i7 6700K is 4c/8t and it is 2 generation older. You should get Cryorig H5 or similar since they will run hot if you overclock.

I agree. Even a 6 core, 6 thread i5-8600K should be all-around faster than an i7-6700K, for about a hundred dollars less...

Just make sure you get a Z370 motherboard, since the 8000-series processors aren't compatible with the motherboards from previous generation processors.
 
It's also worth pointing out that the 1060 6GB you selected isn't actually in stock right now, which you can check by clicking through to the site. The least expensive 1060 6GB cards that appear to be in-stock are all at least $400 currently. Cryptocurrency mining has the prices of graphics cards messed up right now, and normally these cards would start around $250. It might be worth looking for a bundle deal with other components to see if you can find a better price. Tom's hardware recently wrote an article with suggestions about this...
