What Gaming PC should i get for $2000? I'd like it to be a Coffee Lake build and i'm going to buy all the parts when the Graphics Cards prices go down a bit.

I would say ask again when GPU prices are reasonable. Otherwise the most effective way to get a high end gaming PC at the moment is to buy one from a vendor rather then building it.

They offer the best prices for GPUs, still high, but not unreasonably so. For around $2000 you can get something like an i5-8400 + GTX1070 in a complete system.

Something like this should be pretty good...

I really like the GTX 1080 GAMING X from MSI, will it be any different from the WINDFORCE from Gigabyte?

Aside from being $100 more at the moment, they would be quite similar in terms of performance. The Gaming X would certainly be a better candidate for overclocking, but the differences between cards is fairly minor. More comes down to how good your GPU and memory are.
