Is an athlon x4 840 a good match for GTX 1050 2gb

I want to upgrade my gpu from r7 250 to GTX 1050, so how would this card perform with the athlon x4 840 compared to something like a G4560 cpu

That will work and is a good upgrade.
To use that g4560 you would also need a new board and memory so the difference dont matter.
The 4560 is a better processor.
