I rate a GTX 1080 as a better buy if the price is similar. I would not really count too much on overclock. Both cards can overclock but in some games overclocking will quickly throttle back as ambient temps rise. Should count on stocks speeds first and foremost.
VR will work pretty well with both cards.

Also consider 144Hz for the 2K monitor as that is a huge difference and probably the best part of an upgrade. VR will most likely be a short term thing for you but 144Hz would be a permanent and awesome upgrade.
General word on the net is that 500W should be enough for a 1080 but that's without overclocking so 550W will probably be enough if you don't overclock but this depends on makes and various other parameters of the PSU. Yours...

Well, a stock 1080 is faster than a stock 1070 ti, however if your willing to overclock the 1070 ti almost matches the 1080 stock, but the 1080 is known to be a great overclocker. Something to consider, the 1080 will also be better for VR and higher than 1080p gaming, at 2k the 1070 ti should be fine but if you can afford it the 1080 should do you better and sell for more later in life when you upgrade.

As long as the 1080 you buy is either dual 6 pin or a single 8 pin it will, but if its dual 8 pin it wont, if its an 8 pin just adapter dual 6 pin to 8.
