The issue that I am having is that on my Linux laptop, whenever I want to boot off a usb, I cant access the boot menu. I keep trying f12 and that doesn't work. I am using the latest version of Linux Mint and want to install Ubuntu with a usb stick. I am new to Linux btw so all help is appreciated.

I've experienced this too, for some reason, it is set to now show by default. Makes the boot cleaner, but more difficult in your situation. Check this out:
