Wanted to build my own rig, but with gpu's being un-afforable for the foreseeable future i am looking at prebuilt. Help me decide which computer to go with:

1600x + GTX 1080, if it's mostly a gaming PC. The 2 extra cores and 4 extra threads don't make a HUGE difference in gaming like a jump to GTX 1080 would. Although the difference between the two cards and processors is both about the same (10%), the GPU being faster will have the more noticeable impact. More raw FPS.

The difference between a 1600X and R7 1800X (best case scenario) is under 10%. The R7 has big advantages if you were doing workstation tasks like streaming or encoding. Also if you are playing at 1080p you wouldn't use 100% or even 80% of a GTX 1080 so the R5 1600X machine would be smarter for someone streaming and playing on 1080p. A GTX 1080 is actually wasted on 1080p. If you play at 1440p or 4K then GTX 1080...
