I just recently got a Panoramic Modem from Cox. It advertises that it has two networks in 2.4 and 5GHz. Yet when searching on my phone for networks, I only see the 2.4GHz one. Another little side note, Since I connect my computer via Ethernet, how do I know which network I am using?

I would advise you to read the manual. It will show you how to login into the router to adjust settings and most likely to enable the 5ghz network.
If you are using a wired connection trough Ethernet you will simply be connected to the router, Ethernet doesn’t connect to a WiFi network. Although it might name it that way.
Look up guides online how to setup that particular router.
