Since I first bought my PC it has run with a wdc wd10ezex-07m2na1 HDD which is definitely getting on the slow side. I have looked up different SSD's but confused by all the formats and different ports and can't work out which will work best with my system. My PC is mainly used for gaming.

Specs:
CPU- AMD Ryzen 5
MB- Asus Prime B350 Plus
PSU- Corsair VS550

P.S: Would rather not spend too much on it. Just something around 250GB would do.

As much as you might prefer, you can not simply move windows OS files to the ssd.
You need to do either a clean install or use a clone utility to do a bit for bit copy of your hard drive to the new ssd C drive.
If you exclude data files that you will keep on the HDD, figure out how much space you are using.
If that is under 500gb, buy a Samsung evo of 500gb capacity and use their windows mover app.
It is a proprietary license of clonix.
Other ssd vendors have clone utilities, but they need to do a bit for bit copy of the entire drive.
There are methods to move steam games if that is what you mostly have.
Look into macrium reflect which is free and will do the job up to a point.

Bottom line...
The process is not as simple as it might...
As to devices, I favor the Samsung EVO units. They seem to perform a tad better and have fewer issues.

How much of your 1tb hard drive is actually used?

How do you plan to implement the ssd?

If you plan on a new clean install, do so with your hard drive disconnected.
If you don't, windows places a hidden recovery partition in it, making it all but impossible to run without the hard drive also connected. You can reconnect the HDD later. Apps that used the registry will need to be reinstalled after a clean install. There is a procedure to handle steam games. Data files on the hdd will still be available.

If you plan on trying to clone, I suggest using the Samsung ssd migration tool.
It is a C drive mover, not a clone app. You can exclude large folders from the move if your ssd is not large enough.

I would prefer to only move the OS files to it as around 500 GB is taken on the current OS drive. However I forgot to mention that I have a second 2TB drive connected as well to move other files.

Can't move "only the OS".
It's mostly all or nothing from that C drive.

Once we know some more details, we can recommend a way forward.
But it may not be as easy as you hope.
