From an overclocking standpoint, you want to pay attention mainly to # and quality of VRM phases. The gaming 5 has eleven and the gaming 3 has seven. So theoretically, you should be able to attain a more stable overclock on the gaming 5.

If you are happy with say, 4.8GHz - 5.0GHz then the gaming 3 will have a good chance of obtaining that (there are other factors of course). If you want a better chance of higher, stable overclocks go with the gaming 5.

We dont have AsRock in my country that is why Gigabyte. I'd take Asus Maximus X Hero, but too expensive. My choice is only MSI or Gigabyte at this point.

As I wrote in the other response. It is GIGABYTE or MSI because of the budget. I'd go for ROG Maximus X Hero but it is just too expensive for me. Gaming 3 - 160 euros, gaming 5 - 220, if you know something in similar price range, that would be a better choice. Im all ears.
 
I'm using the Gigabyte Z370 Ultra Gaming, which is the lower end of the series, and I'm 50/50 on this board. My goal was to hit a mild 4.8Ghz and I achieved that. It is my first time using Gigabyte. My personal preference is usually Asus>Asrock>Gigabyte>MSI. My next system, I'll head back to Asus I think.

I do agree with you, but the pricing goes that way too. So that is why I will get a gigabyte board. if I can lay my hands on Asus, of course I will but we shall see.
