$2500-$2750 Gaming/Editing PC Build + Setup

Planning to Build a Completely new PC. My previous machine was a gaming laptop and its dying on me.

Budget Range:$2500-$2750 CAN

Will be Primarily Used for Gaming, Streaming and Video Editing.

Requirements:
16GB of RAM
Preferably Nvidia GPU (Single Card)
Not sure if Intel or AMD CPU is the right choice for this my requirements.
Not planning on Overclocking because I don't have any experience in overclocking, may overclock later down the road when I get a better understanding of it.
1 SSD for OS and 1 large Capacity HDD for storage.


Please Include in Budget/Build List:
Price for Windows 10 OS (Don't know if there is a benefit to getting Pro vs Home)
2 Monitors (preferably 1ms, good for gaming and editing)
Gaming Keyboard and mouse.

The Intel 8700k outperforms the 1700 in both gaming and productivity, hence why it is recommended. You can activate Windows down the line if you want to cut some more cost... https://www.howtogeek.com/244678/you-dont-need-a-product-key-to-install-and-use-windows-10/ but i wont recommend cutting any more corners than this...

Why do you recommend the Intel CPU over the AMD CPU? What makes the Intel CPU better for the my requirements?

The Intel Build is over the budget I specified. I don't want to pass the $2750 budget cap before tax.

Can you recommend an Intel build that doesn't surpass the budget?
