This will be the second system I will ever build. I want to use it to try the latest generation of flight sims but I figure if it can run a flight sim well, then it can run just about anything. I play a variety of games.

Do you know where I can find some good builds I can watch or read about?

I know this will require i7 Intel processor and GeForce 1080 video card but I'm unsure about other components.

I'm really tempted to get one of those cases that come with liquid cooling already built in.

I do not have much experience with them so can't comment. But I had heard they may not be compatible with all chipsets.

Mine came through DVD. You have the option, if you want to save costs, to get an unlicensed version of Windows, if you don't mind unactivated ones. Go to microsoft, down the ISO to a USB, install it on your PC and do not activate it to save costs.
