I'm looking to build a pc mainly for Photo Editing using Photoshop & Lightroom. I usually work with multiple 30MB RAW files so RAM and a good CPU is essential.
If this helps, I do photography regularly and edit on SSD prior to exporting to external HDD.

I sold all my gaming consoles so I would like to start gaming on PC. Don't think over-clocking would be something I would do on a daily, would be nice to have a solid build that I can use for 3-5 years.
If it is upgrade-able, that would be a super plus.

Here is a build I tried to put together back in Jan, but I'm looking to spend a couple hundred dollars less so I can invest in a good monitor. 10-bit or higher.

Maybe ditching liquid cooling for normal fans, cheaper case, and cheaper GPU.

i think you better off with i7-8700k, as you only use 2x8gb ram which will run in dual channel, and single graphics card, meanwhile i7-7800x support quad channel ram, a lot more pcie lanes, and pricier due to more features it has. with the mainstream class i7-8700k, you can save some money for features you dont need. also are you sure planning to only have a 500gb ssd? seemed to be pretty small if you want to play games, games can take plenty of space, especially if you got plenty of games. better go with smaller ssd and a hdd. if you want to you can just take m.2 nvme ssd than 2,5" sata ssd for faster speed, which benefits in faster boot time.

oh also if you are buying an i7-7800x and not planning to overclock it would be a waste, as the cpu is designed for enthusiast and the x299 motherboard is expensive too

For now I will only use 2x8GB RAM, but will want to upgrade to 4x8GB later on. Or get those 4 8GB sticks off the bat to not worry about it in the future.

I have a 6TB External at home, won't be downloading tons of games. Just a few.
m.2 is definitely preferred, If i can find a 500gb m.2 ssd for cheaper or the same price, that'd be awesome!

Also, I'm thinking that GPU might be a bit overkill for my needs? Thoughts on that?
I could also save some cash with case and cooling, etc.

its a bit confusing whether to buy 2x8gb first or 4x8gb right away, as the memory prices getting really ridiculous now, there is chance the prices will go down, but no one really knows when, so its up to you. i dont really know whether the gpu is overkill or not, if you are planning to play game in 1440p/4k or really heavy games, it wont be overkill, but if you not playing those kind of games, lower series graphics card is enough

M.2 500GB SSD
GTX 1080 (will not game in 1440p or 4k.. a 1060 or 1070 would even suffice IMO if I can snag a deal somewhere)
Managed to get price down by a couple hundred bucks..

thats pretty good, by the way if you want to, you can get corsair h100i v2 liquid cooler for 99 bucks, thats only if you want to spend a bit extra, also you sure using 4x4gb ram? dont you want to upgrade to 32gb later?

Ahhh.. yes.
Essentially, trying to get it as cheaper as I can, without compromising as much power as I can get.
I think this is my last build. I can upgrade in the future to water cooling, have a pathway to 32GB RAM, and better motherboard in a couple years if I want to start getting crazy haha.

I guess all part seemed to be good, by the way i kinda suggest you to overclock, but once you get a dual radiator liquid cooler, cannot guaranty the air cooler can handle oc so well. I dont really know whether the hyper 212 can handle 8700k stock well or not as there is not really anyone do testing and its something new by intel bringing 6 core mainstream cpu and intel famous of bad cpu TIM lol
