Semi-Portable video-editing / programming build under $1000

Hey, I'm still like 6 months out from getting ready to build, but I was wondering if there are any recommended semi-portable builds. I don't need to move it a lot, but I'll be building it in the US and headed to Vietnam to live for awhile so I want it to fit comfortably in a bookbag if possible. Every search for portable or semi-portable comes up with only mini-itx builds, which seem a little too advanced for and frustrating for me to build. The last time I built a computer was 10 years ago and it was one of those tiger direct packages haha. So I'm looking for something portable but not necessarily super small where I have a bit of flexibility for wires and what not.

I hope to do some video editing and programming on it (potentially unreal engine stuff).

Hey I saw that the case says

INTERNAL 2.5" BAYS

INTERNAL 3.5" BAYS
2

Does that mean I could add a second harddrive? I'm thinking another 1 or 2tb of standard hdd storage.
