Which mobo should get for my I7 8700K overclocking to 5ghz?

Doubt the specific example of MB would matter on CPU headroom within +/- 25 MHz or so, and, with different results given another sample of the same MB....
Chose which one is priced best that has your desired feature set....
(Never was much influenced in the addition (or lack thereof) of the name 'Gaming' in a product line...; pretty much meaningless, especially after including it with X399 mainboards)

How high you can oc is primarily determined by your luck in getting a good chip.
Not all will do 5.0.

at a aggressive vcore near 1.4 or so and delidded
4.9 99%
5.0 72%
5.1 43%
5.2 16%
5.3 3%
Any Z370 motherboard will do the job about as well as another.
Pick a motherboard on other criteria.
As a suggestion:
The noctua NH-D15 is a very good cooler and is all you need for a max overclock in a decent case.
But, I might suggest hat the redesigned NH-D15s is a better cooler.
The s variants including the NH-U14s and NH-U12s have been redesigned to cleat tall ram and also are offset to clear graphics cards mounted in the first pcie x16 slot.
Not all will do 5.0.

I have installed many noctua coolers, but I have no experience with the dark rock pro.
I do not think it is as good as the noctua, but it should do the job if you want.
The noctua nh-d15s is supremely easy to install.
It costs less(I am talking about the NH-D15s)

Noctua uses a larger, slower turning fan which will produce lower noise at comparable cooling.
If your case is decent, and by that, I mean it has at least two 120/140mm front intake fans, then you can run the NH-D15s at half speed where it is all but inaudible and will still keep an overclocked cpu cool enough.
Just my opinion.
