For most games, core count can be ignored once you compare i7 or ryzen 7, the main factor is clock. 8700 runs 4.2 on all cores while 8700k runs 4.3 on all core per stock setting. However, 8700k are usually paired with a beefier aftermarket cooling and atf usually overclicked by user. So average 8700k I would say runs beyond 4.5 ghz on all cores. At most people can get from 8700k is 20% more at 5.0 ghz for daily use, so 8700 in general is a really good gaming cpu. Compare to 8700k, you can pay 20% more for a cpu that’s 2.5% faster at stock, 20% faster for max daily oc, and that doesn’t even count the cooler cost. Compare to a 8600k, price wise it’s a bit more expensive, but it can be offset by the cost of a aftermarket cooler...
Any Intel or AMD CPU from the last two generations, actually, probably any Zen based AMD CPU and any Intel i5 or i7 CPU since Skylake, will do perfectly fine with any modern graphics card. You are not going to be hindered regardless of the CPU you use to any significant degree if you use one of them.

Compare to 7700k, stock speed, 8700 is about the same as 7700k, 7700k could be slightly faster due to high turbo speed at 4.4, oc 7700k is probably second fastest i7 out there.
