I would like to change the tubing for clear tubes and add distilled water with red coloring. I know the fittings are barbed but i want to use standard screw fitting but don't know how to add them to barbed ones. Could i remove the barbed ones and put in regular fittings? If not how to i seal it after without it looking like a disgusting mess? I don't plan to add a res, just swapping the tubes and coolant.

I know how bad if an idea it is and i don't need the standard "oh you should have made a custom loop" or "keep it stock" opinion comments as i didn't ask for them. Please and thx.

I know I'm a bit late to the table, but youtube is full of endless idiocy and directions on how to destroy your machine.
I once saw a video on how to add a second antenna to your WAP, since WAPS with two antennas tend to work better. Yes, WAPs with two antennas are designed to use the two; soldering a second to the single antenna pad will do nothing at best and cause interference at worst.
There realistically is no way to modify the H100i the way you want.
Other than the fittings issues you already described there is also the issue of filling/flushing the loop.

The fittings arent going to allow for new tubing to be installed properly, and there are no threads to install the new fittings.
Without a res you arent going to get enough liquid inside the cooler to run it properly, thats the point of a res in a custom setup. CLCs are manufactured in a way that makes this possible. This is why open loop coolers like the H240x2 have a small, built in res.

As stated above, you can't jerry-rig your AIO as you want. Well, you can but the AIO will be ruined and it won't work properly with high risk of leakage.

Still, all hope isn't lost since you can have clear tubing AIO with red liquid inside it. You just need to buy Raijintek Triton series AIO. Those come with 4 different rad sizes: 140mm, 240mm, 280mm and 360mm. And with 3 different colored liquids: red, green and blue. They also have coolant refilling port,

Regarding the "advice" found on internet, some 10 years ago or so, one guy proudly demonstrated that he cut off portion of his GPU pcb to fit it into his case. About 5cm wide piece from the right side. He also claimed that GPU worked afterwards.
Didn't take long before some guy also followed his "wise" guidance and cut portion of his GPU pcb also off to fit his GPU in a PC case. He even used angle grinder to get clean cut and afterwards sanded the rough cutting edge to make it smoother. Of course, when the follower found out that his GPU doesn't work, he wasn't very happy about it.
