Please take a look at what I built and let me know if it meets my needs for video editing and gaming:

Video editing: Nothing too intense, but should be able to handle 4k video and render in decent times. Should also handle most things in After Effects as I make titles and animations.

Gaming: I want to be able to play most games at 60+fps, games like Fortnite and ESO.

A few things to consider on your build

1) Like others have said, your PSU is on the low side. I'd look at 550w or 600-650w models. 650w is way more than the current build needs but sometimes a 650w will be on sale lower than a 550w. For a good starting point on models to look at check out these two forum posts.

2) Your CPU cooler choice isn't particularly hot. Don't get me wrong, the C7 is a decent low profile cooler, but you don't need to go low profile with your case. The C7 has a max TDP of 100w, and if you start pushing your CPU for rendering you're...
A few things to consider on your build

The C7 has a max TDP of 100w, and if you start pushing your CPU for rendering you're likely going to see that CPU pushed beyond what the cooler can handle. Instead I'd look at something like the Cryorig H7. If you wanted to play with overclocking you can do a bit with that cooler or look at the H5 universal, tho that'll be a tight fit.

3) Your RAM choice is a good one. Like others have mentioned tho, 16GB may be a bit light for serious editing and rendering.

4) For your SSD, go for the 860. The 850 under performs in comparison, and costs $10 more than the 860.

5) Don't forget your OS. If you have an existing copy of Windows, make sure it's either the Retail version or get ready to try and convince MS to let you transfer the license over to the new board. It's typically possible but not 100%.

PSU needs to be better, even better than above. With a such a good build, you definitely cannot skimp on the PSU.

Also, try for a better cooler, the 8700k tends to run hot.

Thanks for the input. I made some changes to the list. I went with the 650w since I will likely be adding more things to it.

Edit: Can you guys look at this image and let me know if you see any red flags? Keep in mind, I don't know much about these things, but I guess buying used makes me nervous.

It is an Asus GTX 1070 Turbo. Image here. I'm a little concerned about the raised silver part along the top right.
