Can I upgrade my 4x2 8gb ram to 4x4 16gb or do I have to upgrade it to 16gb 4x2 + 1x8?

I already bought a 4x2 8gb 2666mhz for my i5 8600 and I'm planning on adding another 4x2 8gb in the future (purely aesthetic purposes) but when I looked up my processor's spec, I see this: Up to 1x16, 2x8, 1x8+2x4. Does that mean I have to upgrade to a single 8gb ram stick and the 4x2 won't work?

Processor specs don't specify ram module configurations. Only ram type is specified there.
What you're reading, most likely is pcie lane configurations.

Best ram configuration on dual channel motherboard is 2 identical ram modules (any i5-8600 supporting motherboard is dual channel). 4 identical ram modules can be used also, but such config causes slight performance penalty. Any other config like 1x16GB or 1x8GB+2x4GB will loose dual channel mode and will operate in single channel mode (or flex mode if supported). Single channel mode is worse than dual channel.

Any limitation will be due to your mother board.

Check the specs on your mobo, if it has 4 slots, you should be able to use any combination you want.
For optimum performance you should use identical pairs.

To answer you question you should be able to have 4x4 for a total of 16Gb, or even 2x4 and 2x8 for a total of 24Gb.
If money is no expense then you can get 4x8 for a total of 32GB.

Money is not a problem but the I don't really need more than 16gb. I only play games and I may stream a bit
