I haven't done any building in a while but I'm trying to make sure I stay up to date on what the newest and baddest in the PC hardware world is. So what is your opinion of what the best of the best is as of 9/14/2018 in each of these categories? I know some of these or perhaps all of them are greatly variable on what the best truly is but I'd still like your opinion on what you think is the best.

What is your favorite overall brand of computer hardware?
MSI is by far and away my #1 choice of hardware in the appropriate categories as well as Noctua, Asus, Thermaltake, Corsair and Intel over AMD (although AMD is really getting pretty dang good these days). I tend to stay away from things that come with built in LED of any kind and fluffier brands of hardware.

Computer Case?
Best available: ???
What I've got: Thermaltake Core-X9 Case Black

Keyboard?
Best available: ???
What I've got: The MSI GK-701 Mechanical Gaming Keyboard

RAM?
Best available: ???
What I've got: 32 GB DDR4-3000 Patriot Viper

Gaming Display?
Best available: ???
What I've got: An Asus PG348Q 3440x1440 100Hz Display

Best Sound?
Best available: ???
What I've got: Soundblaster X Katana

Motherboard?
Best available: ???
What I've got: The MSI Gaming9 ACK X99S Motherboard

GPU?
Best available: ???
What I've got: Asus Strix 1080ti GPU

M.2 SSD?
Best available: ???
What I've got: A Samsung 960 Pro M.2 SSD

CPU?
Best available: ???
What I've got: Intel Core-i7 5960X 8 core 16 HT CPU

PSU?
Best available: ???
What I've got: Corsair Ax1200i PSU

CPU Cooler (EXCLUDING water-cooled customs)?
Best available: ???
What I've got: The Corsair Hydro H110i GTX CLC

Case Fan Application?
Best available: ???
What I've got: I have 4 120 mm brand-unspecified and 8 top case Noctua 3200 RPM PWM case fans with fan controller.

Thanks for info!

It depends on use, one could argue that the 8700K is the better gaming CPU as the performance per core is better. Then there's the i9-7980XE. Case is whatever you prefer but I'm a fan of Phanteks Evolv cases. Another one that could be argued is the display as not all content works well in 21:9 but don't get me wrong, I'm a huge fan of ultra wides and that's what I'd consider if I were to get one.

The GPU I agree on, MB would be a Z370 for the 8700K. M.2 I agree (or 960 Pro) with but the PSU is way overkill for that build, a good quality 650W unit is more then enough. As for the CPU cooler is comes back down to your case and some prefer high end air over water, personally I'd go Kraken X62 V2.
