What cables for the PSU do I need?

Pretty self explanatory.

SATA1/2/3 cables for your hard drives and optical drives.
VGA 1/2 for your graphics card
CPU1 for your motherboard's CPU power
MB for your motherboard.

You only need to plug in cables sufficient for those items you have installed.
