Help needed in organising my hard drives and storage

Probably too long-winded, apologies in advance...

I have just purchased a New Dell XPS9300 desktop (core i7 8700, 16gb ram, nvidia 1070, 256ssd, 2tb hdd) to replace an ageing Dell XPS8300. I am interested in editing my 4k drone footage, and I figured my 7 year-old XPS probably wasn't up to the task. I considered the option of building my own, but I just couldn't match the value of the new Dell, and the old one has been such a reliable workhorse, I decided to take the easy option and pushed the purchase button.

I am wondering what is the most effective (cost-and-performance wise..) way to improve the storage my new computer arrives with? I currently have an 250gb SSD, which I assume has the operating system installed, and a 2tb 7200 HDD. I am thinking more about speed of editing and backing up of files, more than storage - which I will manage with an external storage solution, later down the track. I'd really like to purchase and install a new internal drive and have it all set up before I start using the system.

Question 1: Should I purchase, say, a 1tb SSD and use this for working files, or is the 250gb SSD big enough to house the operating system, graphics program AND the working files?

Question 2: Also, as the 8300 is still in excellent order, I am going to keep it running as a 2nd computer. It still works relatively fast, Core i7, 12gb ram, nvidea560ti, 2 x 2tb HDD... (though video editing was a little slow - to put it mildly..).I am considering the purchase of a SSD for this one, to speed start-up etc...

Are there any other options I should consider, regarding either question?
