You can do just one stick, however it is better to buy RAM in pairs so you can get the performance form dual channel. I would recommend at least 16GB if you are going to be doing alot of gaming. the 8GB x2

Yup. You can get away with 8GB but many many many games especially the every so popular Steam Alphas will gobble up that 8GB easily. You could wait and hope the prices come down, which the investigation into price fixing may achieve, and buy then. Still if you plan on only getting 8GB still buy 2x4GB pair. I would also suggest buying 3000-32000 mhz speed RAM as well.

Tough question, some people have no issues others have nothing but problems when they mis match RAM. Even if they are the same brand and model when they are not sold in matching pairs it's hard to say if they will work correctly.
