How much difference will installing the OS on a SATA SSD or M.2 SSD make?

I'm going to be buying one SSD for my new PC now - either a 250GB WD Black NVME SSD v2 (3000MB/s Read, 1600MB/s Write) or a Crucial MX500 500GB (560MB/s Read, 510MB/s Write) and another SSD later. Which should I buy first (bearing in mind that 500GB would be useful to begin with)? Will boot time be greatly affected between either of these options?

"boot time" is the least of the benefits you get with an SSD vs HDD. Either SATA or NVMe SSD.

Assume the HDD takes 1 minute to boot up.
SATA SSD ~25 secs
NVMe SSD ~18 secs.

So what.
They are both way faster than the HDD.

The difference between the NVMe and SATA SSD is seen elsewhere.

What will you use this system for?

Thanks for your answer, here's some more info:

Ryzen 5 2600 CPU
2TB Seagate Barracuda HDD (7200RPM, 6GB/s, 64mb cache)
GTX 1060 6GB GPU
ASUS ROG Strix B350-F Gaming Motherboard

This system will be used for gaming at 1080p and for rendering/modelling in Maya/Unreal Engine 4

OS will be Windows 10
