Hi, so the deal is plain and simple: gtx 780 ti vs 1060, paired with a 550w psu and an i5 8400. Which one and why?

1060 imo because in some games it slightly edges out the 780ti, and uses less power and is bit more efficient.

Third party 780Ti can match or beat a 1060 6GB in some games; however, overall I would recommend the 1060 6GB as it has more memory which will help when playing some newer games on ultra; even @1080p. If you are talking the 1060 3GB; the 780Ti just stacks a bit better, but would still recommend the 1060 3GB as it is newer. Think of it like buying an old engine for your car instead of a new one.
