Asrock extreme 7+, i7-6700k? or get 8th gen parts?

I am finally ready to a hew build, but Intel has jumped 2 generations since I got all my parts (2 years ago) Is it better to sell off old parts, and buy a coffee lake 8700k and a Asrock Tiachi 370? I already have 32gb ram and a couple of NvME drives, case, PS and win 10 pro. So my costs will be about +$550 to go up to date, and I may get decent money on the skylake and 2 asrock mobo's I currently have. Also have a Tiachi 270 mobo. Had to buy stuff to get a rewards bonus back then. Thank you for the privilege of your time and knowledge, and hope I can resolve question prior to building, Larry :)

It will be a system where I do multitasking and some video editing. Also my AutoCAD LT system, using a 4K monitor. If I can away without a video card, that would be a plus, but I am also thinking of a 1060 card. It will be a "business system", so no gaming will be on there.
