So system is pretty old I7 2600K 16 gig ram and a 1060ssc So my kids are starting into gaming and streaming and Im looking to upgrade so I have been searching around and decided I'll go either I7 8700K or the R2 2700X. I know bench marks vs real world vary and I can get the 8700k and a new ASUS hero MOBO for about 50.00 less than the AMD in with the same setup. I'll keep my H100 water cooler if I go Intel, other than that am I missing something between the two top tier platforms. Thanks.

There is no 1060 ti. Do you mean 1050 ti, 1070 ti, or 1080 ti? There's not much point in upgrading if it's a GTX 1050 ti or GTX 1060. But if you have a GTX 1070 ti or better then a Core i7 8700K might be a good upgrade. If you're just gaming then the 8700K is best but if you're doing video editing or streaming then the 2700X is best. Even then the 8700K is still pretty good for those things too but the 2700X is best for that kind of stuff.
