M.2 SSD and SATA SSD Help please

Thankyou for taking the time to read this, all help is extremely appreciated!

Specs first.

I7 7700k
Asus Strix Z270 F motherboard
Samsung Evo 250GB SSD (current os)
Crucial 500GB SSD (games)
2TB Mechanical HDD
Gtx 1080ti
16gb RAM

So I have a Samsung 970 Evo M.2 SSD on the way and I plan to install tomorrow for OS (Windows 10) and maybe a few games.

I currently have windows 10 installed on my Samsung SATA SSD.

I plan to do a fresh install on the M.2 and then completely clean all my other drives so I can start from scratch.

I think I know how to install Windows 10 on the M.2, please correct me if I'm wrong.

Remove all other drives
Disable CSM in BIOS
Safe Boot Other OS
Boot from USB (retail)
Install Windows as normal
Power down pc and then reconnect other drives. I will then go into device manager and remove all partitions from the non-os drives.

My main question for now though, is currently in my BIOS, when I go into the boot section under Boot/CSM
I see the following:

Launch CSM-enabled

Boot device Control- UEFI and legacy OPROM

Boot from network device - Legacy only

Boot from storage Devices - Legacy only

Boot from PCI-E/PCI expansion device - Legacy only.

Shouldn't these be in UEFI mode?

Edit: I should mention my current settings were on Secure boot OS type other :/ Instead of Windows UEFI

As I'm installing windows onto the M.2 tomorrow it isn't really an issue for now, but is these settings reducing performance? Of course I want the best performance out of my PC so is there any additional things I can do in the BIOS before I go ahead with the install tomorrow? I read that I need all the above to be in UEFI. Also how did I come to have these settings in the first place? As to avoid any issues in the future, and to perhaps help other people with the same issue.

In the boot order I don't see a 'UEFI' option. All I see is "Windows boot manager (P4 Samsung SSD 850 EVO 250GB)

Any additional info for the M.2 install and overall BIOS optimization for my other drives amd general optimization would be amazing!

P.s I will be install Windows 10 of a Purchased USB from a well known PC store

Okay that sounds easier, but what about the thing with the legacy modes instead of UEFI etc?

I'm really OCD about making sure everything is running 100% correct lol

Any advice about the legacy instead of UEFI situation?
